Koginut Stuffed Squash

Ingredients
1 Package Lilac Hedge Sausage
1 Medium-sized onion
Olive Oil
1 Bag Carrots
2 Koginut Squash
Pea Tendrils
1 bag of beets
Steps
Preheat oven to 350°F (220°C).
Peel and cut the carrots and beets, and place in a bowl
Heat a skillet over medium-high.
Add diced onion and cook 2–3 minutes until softened
Add sausage and break it apart
Cook until browned and slightly crispy in spots (about 6–8 minutes).
Take the sausage and place it in a bowl
Add in diced root vegetables to the cast-iron skillet
Sauté for 15 minutes, flipping halfway, until softened
Mix in the cooked sausage
Split your Koginut squash in half and fill with the stuffing ( top with cheese if wanted)
Place in oven at 350 Roast for 25–35 minutes, until the squash is soft enough to put a fork through.
Serve with pea tendrils and your choice of vinaigrette!
