Cast Iron Frittata

One pan meal to feed yourself or your family, all shoppable at White Barn Farm, for under $40.00


Ingredients

  • 1 Dozen Lilac Hedge Eggs

  • 1 Medium-sized onion

  • 1 Bag baby potatoes

  • Cayenne WBF Hot Sauce (optional)

  • 1 Bag of WBF Spinach

  • 1 block Plymouth Cheese Sage & Herb Cheddar

  • Butter

  • Olive oil

  • 1/2 cup Milk


Steps

  • Preheat oven to 400°F

  • Peel and thinly slice baby potatoes and onion

  • Heat a cast iron skillet with butter and olive oil. Sauté onions until soft and golden

  • Add sliced potatoes and cook until just tender. Remove from heat

  • In a bowl, whisk 12 eggs with salt, pepper, and ½ cup milk

  • Shred Plymouth Cheese Sage & Herb Cheddar and stir into the eggs

  • Pour the egg mixture over the potatoes in the skillet

  • Chop spinach and fold into eggs

  • Bake at 400°F for 15–20 minutes, until set and lightly golden
