Cast Iron Frittata

Ingredients
1 Dozen Lilac Hedge Eggs
1 Medium-sized onion
1 Bag baby potatoes
Cayenne WBF Hot Sauce (optional)
1 Bag of WBF Spinach
1 block Plymouth Cheese Sage & Herb Cheddar
Butter
Olive oil
1/2 cup Milk
Steps
Preheat oven to 400°F
Peel and thinly slice baby potatoes and onion
Heat a cast iron skillet with butter and olive oil. Sauté onions until soft and golden
Add sliced potatoes and cook until just tender. Remove from heat
In a bowl, whisk 12 eggs with salt, pepper, and ½ cup milk
Shred Plymouth Cheese Sage & Herb Cheddar and stir into the eggs
Pour the egg mixture over the potatoes in the skillet
Chop spinach and fold into eggs
Bake at 400°F for 15–20 minutes, until set and lightly golden
