Ingredients
1 Package Lilac Hedge Chicken Thighs
1 Medium-sized onion
Olive Oil
1 Bag Carrots
1 Head Kohlrabi
1 large Sweet Potato
1 head of Garlic
Chicken stock
Steps
Preheat oven to 350°F (220°C).
Chop veggies + toss with olive oil, salt, pepper, and herbs from your spice cabinet.
Heat your cast iron and sear chicken thighs skin-side down until golden + the fat renders.(6-8 minutes per side)
Add veggies right into the pan around the chicken.
Add chicken stock to prevent it from burning
Add in diced root vegetables to the cast-iron skillet
Sauté for 15 minutes, flipping halfway, until softened
Place in oven at 350 Roast for 25–35 minutes, until the squash is soft enough to put a fork through.
