White Balsamic Vinaigrette

This is a mayonaise based salad dressing, so if you already make your own mayonaise and like your method - just follow that to begin with and then add some white balsamic (sometimes called golden balsamic) vinegar.

 

In a blender put:

2 whole eggs

1 tsp dijon mustard

1 small diced shallot

whiz together then start to drizzle in through the hole in the lid: 1 cup of oil (I usually put some blend of good olive oil and organic canola oil). it is important to do this very slowly so that the oil can emulsify into the eggs.

by the end of the cup of oil you should have a good, thick mayo.

then drizzle in: 1/3 cup of white balsamic vinegar

voila!
