Crunchy Joi Choi Slaw


¼ c. Downing’s Apple Cider Vinegar

      (or Rice Vinegar)

1 TBS dark sesame oil

2 tsp sugar

2 tsp Dijon Mustard

¼ tsp salt

6 c. very thinly sliced Joi Choi

2 med carrots, shredded

2 scallions, thinly sliced

 

Mix all together, serve.

Delicious,easy, and light. The carrots and dressing cuts the strong flavor of the choi just right. I used rice wine vinegar. Good with sushi.
