Pasta with Broccoli Raab & Walnuts

1 lb whole-wheat pasta

1 bunch broccoli raab, trimmed and cut into one-inch lengths

¼ cup olive oil

½ cup walnuts

2 garlic cloves, minced

½ tsp crushed red pepper flakes

½ tsp salt

¼ cup parmesan

 

Preheat oven to 350. Cook pasta in a large pot of salted boiling water according to package directions. Meanwhile, toss broccoli raab with olive oil, walnuts, minced garlic gloves, salt, and red pepper flakes in roasting pan. Roast in oven for about 5 minutes. The leaves should wilt well but not burn. Toss raab mixture with the drained pasta and another splash of olive oil. You can also toss in the Parmesan or sprinkle over top when plated.
